葛 is a JLPT N1 kanji meaning arrowroot, kudzu, written with 11 strokes. It is read カツ, カチ (on) and つづら, くず (kun). It is one of the jōyō kanji taught in secondary school. You will see it in 葛藤 (かっとう, conflict) and 葛 (くず, kudzu).
